C'est en France, auprès de son beau-père M. Albert Dufour, que M. Roland Étienne apprendra le métier de boulanger. Remarquant l'intérêt grandissant des consommateurs québécois pour la baguette française, Roland et Odette Étienne fondent Au Pain Doré le 1er mai 1956 pour répondre à cette demande. Ils installent leur boulangerie artisanale sur la rue Marquette et fournissent les restaurants à la mode, les grands hôtels et quelques pâtisseries.
