At Segar we want you to come away having experienced something unique. Spice Route Cuisine is the inspired cultural exchange that took place when new sea passages transformed the world into a global market. Spices that were once indigenous to sometimes one or two tiny islands began to make their way around the globe, dramatically changing the culinary landscape in the process. There were no national cuisines at this point, only the inspired and adventurous use of new flavours. In the same way, the food at Segar is unbound by cultural distinction, inspired by a time when flavours met each other for the first time. We want the food experience to be reminiscent of the Age of Discovery; a time when the palate was first awakened to the richest flavours in the world.
