Located at 1801 Collins Avenue, Pauline reads as a love letter to the coast: precise technique paired with sunlit, transportive flavors drawn from the Caribbean and Latin America. Led by Culinary Director Abram Bissell – a Florida Keys native who has led the celebrated, Michelin-starred kitchens of The Modern, NoMad, and Eleven Madison Park—the menu is confidently seafood-forward, built around pristine ingredients and clarity of execution.
The raw bar takes a more expressive approach than traditional, featuring Jonah crab claws, conch ceviche, and Key West pink shrimp; from there, small plates like rock shrimp fideos and caviar tostada lead into signature entrées including lobster and mussel sancocho and turbot encendido. Every dish is crafted without seed oils, reflecting a commitment to cleaner, more balanced dining without sacrificing depth or indulgence.
Named for Pauline Baker, wife and muse of famed cocktail writer Charles H. Baker Jr., the restaurant channels a spirit of romance, curiosity, and travel.
