Savoury cornmeal festival patties and stick-to-the-ribs fried dumplings get the juices flowing, helped along by pineapple soda, ginger beer or coconut water. Succulent, tender oxtail or jerk chicken falls from the bone, served with oh-so-irie coleslaw and oxtail gravy–bathed rice and peas. Rotis—filled with choice of meat (jerk pork, chicken or curried beef), fish (red snapper or ackee and saltfish) or veg (curried veg or chickpeas)—are generous enough to satisfy two appetites.
